So today’s lunch was a yum vegan salad. I usually have this with feta cheese but as I’ve gone vegan for lent, I’ve gone without.
- Half a bag of lettuce leaves
- 1/4 of a cucumber
- An avacado
- 1/4 of a red onion
- 5 sundried tomatoes
- Handful of sunflower seeds
- Any cheese/meat you want to add
I didn’t actually put a salad dressing on this because the sundried tomatoes are quite oily which actually adds to the salad nicely. I have had a balsamic vinegar dressing on it in the past though and that’s really nice.
I also had one of the Warburton’s thins (the seeded one) and toasted it with a bit of butter which was really tasty.
Salads are just so easy to make and you can pretty much throw in whatever you fancy!
